How do you configure your game so that you fight a certain person?

I know how the order system works, but i was wondering, lets say for example I just wanted to fight someone.... like Kung Fu Man for example, how would I make it so that I fight him first and no one else?

In watch mode you can control P1. But I fogot how.

Its easy, just press ctrl + 1 before the round begins to take control of player one or ctrl + 2 for player two.

or you could just make KFM the only character with order=1 or w/e.
