It was the last boss from this game off the Sega Genesis called "Alien Invasion" I think, the guy just sat there in his chair and you just had to hit him till he died, if thats not an easy boss then idk what is.

Too lazy to make a list, but the final Tank in Red Faction Guerrilla was very easy. I just use the nano rifle and killed him before he started talking.

Also if you use the Fake Death Pill/Stun Grenade strategy on The Fear in MGS3 you can literally beat him in 5 seconds, stamina kill even with a lethal weapon.
