Mine at the moment is Sonic Adventure 2 Original soundtrack, some very good songs if i do say so myself love these ones the most:

i love all the final fantasyes music(i have all osts completed  @-)) and all the suikoden music(i am collecting the osts right now)
also i love the castlevania symphony of the night ost :w00t:

Yeah, me too.  I like soundtracks of sonic and Final Fantasy (especially FFIV).
Other than these, I like Street Fighter III 3rd strike's  ;D

This is really hard because there is allot of great music.
All the Final Fantasys
Chrono Trigger
Xenogears
Castlevaina games (even the sound on the game boy ones were good)
Mega Man games and X games rocked hard!
Armored Core and Dragonseeds had good techno music.
Its just hard to pic one favorate!

Also sounds like Super Mario Galaxy has really nice orchestrated music, so I might like that too.

Metal Slug 3 has great tracks(i cannot get tired of listening to the final boss theme)
KOF 99 has great music too(Krizalid 2nd form theme:Epic Win!)
MVC1 has great music too(Hiryu´s theme and Cap Commando rock!)
And many others i cannot recall now... (:|
